Blue Corn Bread

3 cups blue cornmeal

4 teaspoons baking powder

6 tablespoons sugar

1 1/2 cups milk

2 large eggs, beaten

6 tablespoons bacon fat

2 small cans of green chilies, chopped

Combine blue cornmeal, baking powder, and sugar. Mix remaining ingredients except bacon fat in separate bowl. Add liquid mix to dry ingredients [cornmeal, baking powder, sugar] and mix thoroughly. Pour into 2 greased 8 x 8 baking pans and bake in preheated oven at 350 degrees for 30 minutes or until toothpick comes out clean.

 

~Salsa~

2 cups onion

4 garlic cloves

2 cups of diced tomatoes

2 (4 oz.) cans of green chili

1 teaspoon salt

2 tablespoons ground red chili

Simmer all ingredients, add salt to taste. Allow to marinate at least 15 minutes.
